Le nocciole IGP selezionate vengono essiccate, sgusciate e tostate. Miele, zucchero e albume d'uovo vengono cotti in un impasto a bagnomaria per un'intera mattinata. Quando si raggiunge la consistenza ideale, si aggiungono le nocciole tostate. L'impasto ancora caldo viene arrotolato, modellato e tagliato a mano.
