Des noisettes IGP s\u00e9lectionn\u00e9es sont s\u00e9ch\u00e9es, d\u00e9cortiqu\u00e9es et grill\u00e9es. Le miel, le sucre et le blanc d'\u0153uf sont cuits au bain-marie pendant toute une matin\u00e9e pour former une p\u00e2te. Lorsque la consistance id\u00e9ale est atteinte, les noisettes grill\u00e9es sont ajout\u00e9es. La masse encore chaude est en partie lamin\u00e9e, fa\u00e7onn\u00e9e et d\u00e9coup\u00e9e \u00e0 la main.
