Selected IGP hazelnuts are dried, shelled and roasted. Honey, sugar and egg white are cooked into a dough in a bain-marie for a whole morning. When the ideal consistency is reached, the roasted hazelnuts and almonds are added. The still-warm mixture is rolled, moulded and cut by hand.
