Piedmontese peppers filled with a spicy farce made from tuna, anchovies, capers and parsley. This classic Piedmontese recipe uses a local variety of pepper that is milder than normal chilli peppers. Even today, the peppers are still stuffed by hand with a variety of ingredients and marinated in sunflower oil.
